Cupcakes & roast chicken...A food filled weekend

I always had a sneaking suspicion this weekend would be filled with food, and I was right. It started on Friday night after an unexpected call for cupcake help (a call I'll alway answer) when a friend needed a helping hand icing cupcakes for her daughters Baptism. What delicious results. And who knew you could make mint patties from scratch...

After eating the iced cupcakes on Saturday, Sunday started with more baking, and finished with cooking for dinner for Mum for mothers day. Rhubarb fool with lemongrass was already on the menu for desert...I wanted something just as simple for main. So I cooked Bill Granger's Ricotta and Herb Stuffed Roast chicken (check back Thursday as I'll be writing up the recipe). Absolutely delicious, and so easy to make. I've even been known to cook this during the week. Big success, and mum and dad walked away licking their lips.

A weekend that revolved around food...who could ask for anything more.
